Two kitchens. One fire.
The Bear began as a single mobile hopper pan and a bowl of coals — today it's Paris's live-fire fusion of Ceylon street food and French technique.
The Idea
Street food, staged like theatre
Hoppers are usually a home kitchen affair — a hot pan, a practiced wrist, and a bowl that goes from batter to lace-edged bowl in under a minute. We built a mobile version of that kitchen so guests could watch it happen, wherever the party is.
Paris gave us the second half of the idea: pairing that technique with ingredients the city already loves — truffle, blue crab, honey mustard — without losing the sambals and curries that make a hopper a hopper.

This mobile station is our proof of concept — the plan is to grow it into a full events house: more stations, more cities, and a booking platform guests can build their own menu on.
